This would probably also work to allow you to change the product key on all versions of Windows 8 Professional, Windows 8 Enterprise, or pre-release versions.
Open run (now by right clicking in the bottom left of the screen in Windows 8).
Type in run; slui 3
This will open the Change Product Key dialog you're used to seeing.
